Method

Preparation of Fish

    Prepare the Batter

    In a large bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Gradually add cold sparkling water until the batter is smooth and thick.

    Batter the Fish

    Pat the cod fillets dry with paper towels. Dip each fillet in the batter, ensuring it is fully coated.

Frying the Fish

    Heat the Oil

    In a deep fryer or large pot, heat oil to 350°F (175°C).

    Fry the Fish

    Carefully place battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Preparation of Pommes Frites

    Cut the Potatoes

    Peel and cut the russet potatoes into thin strips to make fries.

    Fry the Potatoes

    Fry the potato strips in the same oil at 350°F (175°C) for about 3-4 minutes until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

Making Tartar Sauce

    In a bowl, mix mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill until well combined.

Serving

    Serve the crispy fish alongside hot fries, with malt vinegar and Thai ketchup on the side, and a generous dollop of house-made tartar sauce.
