    Prepare the Tartar Sauce

    In a bowl, combine mayonnaise, diced pickles, capers (if using), and lemon juice. Mix well and set aside.

    Prepare the Fish

    Season the Mahi Mahi or Icelandic Cod fillets with olive oil, salt, and black pepper. If grilling, preheat the grill to medium-high heat. If frying, heat a skillet over medium heat.

    Cook the Fish

    Grill the Mahi Mahi for about 4-5 minutes per side or until cooked through. If using Icelandic Cod, fry for about 3-4 minutes per side until golden brown and cooked through.

    Melt the Cheese

    During the last minute of cooking, place a slice of Monterey Jack cheese on each piece of fish to melt.

    Prepare the Buns

    Lightly toast the brioche buns on the grill or in a toaster.

    Assemble the Sandwich

    Spread a generous amount of homemade tartar sauce on the bottom half of each toasted bun. Place the cooked fish on top, followed by lettuce, tomato slices, and red onion rings. Top with the other half of the bun.
