    Prepare the Pork Shank

    Season the pork shanks with salt and black pepper on all sides.

    Sear the Meat

    In a large Dutch oven, heat olive oil over medium-high heat. Add the pork shanks and sear until browned on all sides. Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrot, and celery. Sauté for about 5 minutes until softened. Add minced garlic and sliced mushrooms; cook for another 3 minutes.

    Deglaze the Pot

    Pour in the white wine and scrape the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes.

    Add Stock and Herbs

    Stir in the veal stock, thyme, and bay leaves. Bring to a simmer.

    Braise the Pork

    Return the seared pork shanks to the pot, ensuring they are submerged in the liquid. Cover the pot with a lid and reduce heat to low. Cook for 2 to 2.5 hours, until the meat is tender and falling off the bone.

    Serve

    Remove the pork shanks from the pot and let rest for a few minutes. Serve with the braising liquid and vegetables.
