Prep the Filet
Preheat the oven to 200°C (400°F). Using a sharp knife, make a pocket in each filet mignon for the cheese filling. Be careful not to cut all the way through.

Sear the Filet
Heat a skillet over medium-high heat and add a bit of vegetable oil. Sear the stuffed filets for about 2-3 minutes on each side until browned. Transfer to the oven and bake for 10-12 minutes for medium-rare.

Make the Tuscan Sauce
In the same skillet, add chopped portabella mushrooms and sauté until softened. Pour in the veal stock and heavy cream, stirring to combine. Allow to simmer for about 5 minutes until slightly thickened.

Prepare Crispy Onion Tanglers
Dredge the thinly sliced onion in flour, then fry in hot vegetable oil until golden and crispy. Drain on paper towels.
