Tortilla Chips

Prepare the Tortillas
Cut the corn tortillas into 6 equal triangles to form the chips.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Chips
Carefully place the tortilla triangles in the hot oil, frying them in batches until they are golden brown and crispy, about 2-3 minutes per batch.

Drain and Season
Remove the chips with a slotted spoon and drain on paper towels. Immediately sprinkle with salt while still hot.
Salsa

Combine Ingredients
In a large mixing bowl, combine diced tomatoes, finely chopped red onion, minced jalapeño pepper, and chopped cilantro.

Add Seasoning
Pour in the lime juice, and sprinkle with salt and black pepper. Mix well to combine all ingredients.

Chill the Salsa
Let the salsa sit at room temperature for 15-30 minutes to allow the flavors to meld together.
