Preparation of Taco Filling

    Prepare the Pork

    Trim excess fat from the pork shoulder and cut into large chunks.

    Marinate the Pork

    In a mixing bowl, combine orange juice, minced garlic, oregano, cumin, salt, pepper, and bay leaves. Add the pork chunks, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Pork

    In a slow cooker, place the marinated pork along with the chopped onion. Cook on low for 8 hours or until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard bay leaves and mix shredded pork with some of the cooking juices to keep it moist.
