Chocolate Mousse Base

Whipped Cream

Method

Chocolate Mousse Base Preparation

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and butter. Set the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Separate the Eggs

While the chocolate mixture cools, separate the egg yolks from the egg whites. Place the yolks in a large mixing bowl and the whites in a separate, clean bowl.

  3. 3

    Mix Egg Yolks and Sugar

Add granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

  4. 4

    Combine Chocolate with Egg Mixture

Slowly pour the melted chocolate mixture into the egg yolk mixture, whisking continuously until well combined.

  5. 5

    Beat Egg Whites

Using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form. This will take about 2-3 minutes.

  6. 6

    Fold in Egg Whites

Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

Whipped Cream Preparation

  1. 7

    Whip the Cream

In a separate bowl, pour the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

  2. 8

    Combine Cream with Chocolate Mixture

Gently fold the whipped cream into the chocolate mousse mixture until fully incorporated. Be careful to maintain the fluffiness.

Chilling and Serving

  1. 9

    Chill the Mousse

Spoon the mousse into serving dishes or glasses and cover with plastic wrap. Refrigerate for at least 2 hours, or until set.

  2. 10

    Serve

Once set, serve the chocolate mousse chilled, optionally garnished with chocolate shavings or fresh berries.
