Chocolate Mousse Base Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and butter. Set the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Separate the Eggs
While the chocolate mixture cools, separate the egg yolks from the egg whites. Place the yolks in a large mixing bowl and the whites in a separate, clean bowl.

Mix Egg Yolks and Sugar
Add granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

Slowly pour the melted chocolate mixture into the egg yolk mixture, whisking continuously until well combined.

Beat Egg Whites
Using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form. This will take about 2-3 minutes.
