Method

Cookies

  1. 1

    Prepare the Dough

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

  2. 2

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

  3. 3

    Mix Together

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

  4. 4

    Chill the Dough

Cover the dough with plastic wrap and refrigerate for at least 1 hour to make it easier to roll out.

  5. 5

    Preheat Oven

Preheat your oven to 350°F (175°C).

  6. 6

    Roll and Cut Cookies

On a floured surface, roll out the chilled dough to about 1/4 inch thick. Use cookie cutters to cut out shapes for your logos.

  7. 7

    Bake

Place the cookies on a baking sheet lined with parchment paper and bake for 8-10 minutes or until the edges are lightly golden. Allow to cool completely.

Raspberry Frosting

  1. 8

    Prepare the Frosting

In a mixing bowl, beat together the unsalted butter and powdered sugar until smooth and creamy.

  2. 9

    Add Raspberries

Mash the fresh raspberries in a separate bowl and then fold them into the frosting mixture.

  3. 10

    Finish the Frosting

Add heavy cream and vanilla extract to the frosting, mixing until you reach your desired consistency.

  4. 11

    Frost the Cookies

Once the cookies are completely cool, use a piping bag or a knife to spread the raspberry frosting on each cookie.
