For the Caramelized Onions

For the Gorgonzola Cheese

For the Profiteroles

Method

Preparing the Tenderloin

  1. 1

    Season the Meat

Pat the tenderloin dry with paper towels. Season all sides generously with salt and black pepper.

  2. 2

    Sear the Tenderloin

In a large skillet, heat olive oil over medium-high heat. Add the tenderloin and sear for about 3-4 minutes on each side until browned. Reduce heat to medium, cover, and cook for another 10-15 minutes for medium-rare, or until desired doneness. Remove from skillet and let rest.

Caramelizing the Onions

  1. 3

    Slice the Onions

    Thinly slice the onions.

  2. 4

    Cook the Onions

In the same skillet used for the tenderloin, melt butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they become soft and golden brown, about 15-20 minutes.

  3. 5

    Add Flavor

Stir in brown sugar and balsamic vinegar, cooking for an additional 5 minutes until the mixture thickens. Remove from heat.

Preparing the Profiteroles

  1. 6

    Make the Dough

In a saucepan, bring water and butter to a boil. Once boiling, add flour and stir vigorously until a dough forms. Remove from heat.

  2. 7

    Combine with Eggs

Allow the dough to cool slightly, then add eggs one at a time, mixing well after each addition until smooth.

  3. 8

    Bake the Profiteroles

Preheat the oven to 400°F (200°C). Spoon or pipe the dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden and puffed. Let cool.

Assembling the Canapes

  1. 9

    Slice the Tenderloin

Once the tenderloin has rested, slice it into thin medallions.

  2. 10

    Prepare the Canapes

Cut the tops off the cooled profiteroles. Fill each with a slice of tenderloin, a spoonful of caramelized onions, and a crumble of gorgonzola cheese.

  3. 11

    Serve

Arrange the canapes on a serving platter and serve immediately.
