Method
Preparing the Tenderloin

Season the Meat
Pat the tenderloin dry with paper towels. Season all sides generously with salt and black pepper.

Sear the Tenderloin
In a large skillet, heat olive oil over medium-high heat. Add the tenderloin and sear for about 3-4 minutes on each side until browned. Reduce heat to medium, cover, and cook for another 10-15 minutes for medium-rare, or until desired doneness. Remove from skillet and let rest.
Caramelizing the Onions

Thinly slice the onions.

Add Flavor
Stir in brown sugar and balsamic vinegar, cooking for an additional 5 minutes until the mixture thickens. Remove from heat.
Preparing the Profiteroles

Combine with Eggs
Allow the dough to cool slightly, then add eggs one at a time, mixing well after each addition until smooth.

Bake the Profiteroles
Preheat the oven to 400°F (200°C). Spoon or pipe the dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden and puffed. Let cool.
Assembling the Canapes

Slice the Tenderloin
Once the tenderloin has rested, slice it into thin medallions.

Prepare the Canapes
Cut the tops off the cooled profiteroles. Fill each with a slice of tenderloin, a spoonful of caramelized onions, and a crumble of gorgonzola cheese.

Arrange the canapes on a serving platter and serve immediately.
