Pie Crust

Prepare the Pie Crust
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Apples
Peel, core, and slice the Granny Smith apples into thin slices.

Mix the Filling
In a large bowl, toss the sliced apples with brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated.

Fill the Pie Crust
Pour the apple mixture into the prepared pie crust, spreading it evenly.
Streusel Topping

Prepare the Streusel
In a medium bowl, combine oats, flour, brown sugar, and cinnamon. Melt the butter and mix it in until crumbly.

Sprinkle the streusel mixture evenly over the apple filling.
Baking

Bake the Pie
Preheat the oven to 425°F (220°C). Bake the pie for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until the apples are tender and the crust is golden brown.

Allow the pie to cool for at least 2 hours before slicing. Serve warm or at room temperature.
