Prepare the Pie Crust
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing with a fork until the dough comes together. Divide the dough into two equal parts, shape into discs, and wrap in plastic wrap. Refrigerate for at least 1 hour.

Prepare the Apples
Peel, core, and slice the granny smith apples into thin slices and place them in a large mixing bowl.

Mix with Sugars and Spices
Add granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch to the apples. Toss well to coat the apples evenly.

Let it Sit
Allow the apple mixture to sit for about 10 minutes to let the flavors meld.
Assembly and Baking

Preheat Oven
Preheat your oven to 425°F (220°C).

Roll Out the Dough
On a floured surface, roll out one disc of dough to fit a 9-inch pie plate. Place the rolled dough into the pie plate.

Fill the Pie Crust
Pour the apple filling into the prepared pie crust and dot with unsalted butter.

Top Crust
Roll out the second disc of dough and place it over the apple filling. Trim excess dough and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.

Apply Egg Wash
In a small bowl, whisk together the egg and milk. Brush the mixture over the top crust for a golden finish.

Bake the Pie
Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 35-45 minutes, or until the apples are tender and the crust is golden brown.

Remove the pie from the oven and let it cool for at least 2 hours before serving to allow the filling to set.
