Prepare the Pie Crust

    Mix the Dry Ingredients

    In a large bowl, combine 2.5 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 0.5 teaspoon of salt.

    Cut in the Butter

    Add 1 cup of chilled and cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add 6 tablespoons of ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Cherry Filling

    Combine Ingredients

    In a large bowl, mix together 4 cups of pitted cherries, 1 cup of granulated sugar, 3 tablespoons of cornstarch, 2 tablespoons of lemon juice, 1 teaspoon of vanilla extract, 0.5 teaspoon of ground cinnamon, and 0.25 teaspoon of salt.

    Let it Sit

    Allow the cherry mixture to sit for about 15 minutes to let the juices release.

Assemble the Pie

    Roll Out the Dough

    On a floured surface, roll out one disc of pie dough to fit a 9-inch pie pan. Place the rolled dough into the pan.

    Fill with Cherry Mixture

    Pour the cherry filling into the pie crust, spreading it evenly.

    Create Lattice Topping

    Roll out the second disc of dough and cut it into strips. Arrange the strips over the filling in a lattice pattern.

    Seal the Edges

    Trim excess dough and crimp the edges to seal.

    Brush and Sprinkle

    Brush the lattice with the beaten egg and sprinkle 1 tablespoon of granulated sugar over the top.

Bake the Pie

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Bake the pie for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

    Let the pie cool for at least 2 hours before slicing to allow the filling to set. Serve with ice cream if desired.
