Pie Crust

    Prepare the Pie Crust

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together.

    Chill the Dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    After chilling, roll out the dough on a floured surface to fit your pie pan. Transfer the dough to the pan and trim the edges.

Peach Filling

    Wash, pit, and slice the fresh peaches into thin wedges.

    In a large bowl, combine the sliced peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Toss gently until the peaches are well coated.
