Cinnamon Oatmeal Streusel

Method

Pie Crust

  1. 1

    Make the Pie Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed unsalted butter.

  2. 2

    Cut in the Butter

Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

  3. 3

    Add Ice Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough holds together but is not sticky.

  4. 4

    Chill the Dough

Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Blueberry Filling

  1. 5

    Prepare the Blueberries

In a large bowl, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and ground cinnamon. Toss gently to coat.

  2. 6

    Let Filling Rest

Let the filling sit for about 10 minutes to allow the juices to release.

Cinnamon Oatmeal Streusel

  1. 7

    Mix the Streusel Ingredients

In a separate bowl, combine the rolled oats, all-purpose flour, brown sugar, and ground cinnamon.

  2. 8

    Incorporate Melted Butter

Pour in the melted butter and mix until the mixture is crumbly.

Assemble and Bake

  1. 9

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 10

    Roll Out the Pie Crust

On a floured surface, roll out the chilled pie dough to fit a 9-inch pie dish. Transfer to the dish and trim any excess dough.

  3. 11

    Add the Blueberry Filling

Pour the blueberry filling into the prepared pie crust, spreading it evenly.

  4. 12

    Top with Streusel

Sprinkle the cinnamon oatmeal streusel evenly over the blueberry filling.

  5. 13

    Bake the Pie

Bake in the preheated oven for 45-50 minutes, or until the filling is bubbly and the streusel is golden brown.

  6. 14

    Cool and Serve

Allow the pie to cool for at least 30 minutes before slicing and serving.
