Preparing the Base

In a medium saucepan, combine heavy cream, whole milk, granulated sugar, and salt. Heat over medium heat, stirring frequently, until the mixture is hot but not boiling.

Thicken the Mixture
Continue to cook the mixture over medium heat, stirring constantly until it thickens enough to coat the back of a spoon. This will take about 5-7 minutes.

Strain and Add Vanilla
Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Stir in the vanilla extract.

Chill the Mixture
Cover the bowl with plastic wrap, pressing it directly onto the surface of the mixture to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
Churning and Freezing

Churn the Ice Cream
Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, typically for about 20-25 minutes.

If desired, add chocolate chips or chopped nuts during the last 5 minutes of churning.

Freeze the Ice Cream
Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
