Preparation of Vanilla Base

    Prepare the Vanilla Beans

    Split the vanilla beans lengthwise with a sharp knife and scrape out the seeds. Reserve both the seeds and the pods for infusion.

    Combine Ingredients

    In a saucepan, combine the milk, heavy cream, granulated sugar, and the scraped vanilla seeds along with the pods. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Once the milk mixture is hot, slowly pour about half of it into the bowl with the egg yolks, whisking constantly to temper the yolks and prevent them from curdling.

    Combine and Cook

    Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-8 minutes).

    Strain

    Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a clean bowl to remove the vanilla pods and any curdled egg bits.

    Add Vanilla Extract

    Stir in the vanilla extract and pinch of salt into the strained mixture.

    Cool and Store

    Let the vanilla base cool to room temperature, then cover and refrigerate until completely chilled (at least 4 hours or overnight).
