Beans Preparation

Soak the Beans
Rinse the dried navy beans under cold water. Place them in a pot and cover with 4 cups of water. Let them soak overnight or for at least 6-8 hours.

Cook the Beans
After soaking, drain and rinse the beans. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and smoked paprika, and cook for an additional minute.

Simmer the Beans
Add the soaked beans to the pot, then pour in enough fresh water to cover the beans by about 1 inch. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours or until the beans are tender. Season with salt and black pepper to taste.

Prepare the Toast
While the beans are cooking, preheat your oven to 400°F (200°C). In a small bowl, mix the softened butter with garlic powder and chopped parsley.

Toast the Bread
Spread the garlic-parsley butter evenly on each slice of sourdough bread. Place the slices on a baking sheet and toast in the oven for 10-12 minutes, or until golden brown and crispy.
