For the Choux Pastry

    Prepare the Dough

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring until the butter melts.

    Once boiling, remove from heat and quickly stir in the flour until a sticky dough forms.

    Incorporate the Eggs

    Let the dough cool for a few minutes, then add the eggs one at a time, mixing until fully incorporated after each addition.

    Pipe the Eclairs

    Preheat your oven to 400°F (200°C). Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-5 inch long strips onto a baking sheet lined with parchment paper.

    Bake

    Bake in the preheated oven for 20-25 minutes or until puffy and golden brown. Allow to cool completely.

For the Pastry Cream Filling

    Heat the Milk

    In a saucepan, heat the milk over medium heat until it just starts to simmer.

    Mix the Sugar and Cornstarch

    In a bowl, whisk together the sugar and cornstarch.

    Combine with Egg Yolks

    In another bowl, whisk the egg yolks. Gradually add the sugar mixture to the egg yolks, whisking constantly.

    Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.

    Thicken the Cream

    Return the mixture to the saucepan over medium heat. Cook, whisking constantly until it thickens and bubbles. Remove from heat and stir in butter and vanilla.

    Cool the Cream

    Transfer the pastry cream to a bowl, cover with plastic wrap directly on the surface, and refrigerate until chilled.

For the Chocolate Glaze

    Heat the Cream

    In a saucepan, heat the heavy cream over medium heat until it simmers gently.

    Melt the Chocolate

    Remove the saucepan from heat and add the chocolate chips and butter. Stir until completely melted and smooth.

    Let the glaze cool slightly before using.

Assembly

    Fill the Eclairs

    Use a small knife to make a hole in each cooled éclair. Fill a piping bag with the chilled pastry cream and pipe into each éclair until filled.

    Dip the tops of each filled éclair into the chocolate glaze or pour the glaze over the eclairs. Allow to set before serving.
