    In a small saucepan, melt the unsalted butter over low heat until completely melted. Remove from heat and let it cool slightly, but do not allow it to solidify.

    In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is pale and slightly thickened.

    Create a Double Boiler

    Place the bowl with the egg yolk mixture over a saucepan of simmering water (double boiler method). Make sure the bottom of the bowl does not touch the water.

    Whisk the egg yolk mixture continuously for about 3-5 minutes, until it thickens and becomes creamy.

    Incorporate the Butter

    Gradually whisk in the melted butter, a little at a time, until the sauce is thick and smooth. Make sure to whisk constantly to ensure the sauce emulsifies properly.

    Season the Sauce

    Once all the butter is added, remove the bowl from the heat. Stir in salt and a pinch of cayenne pepper to taste.
