    Sauté the Base Ingredients

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until they are softened. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

    Brown the Meat

    Add the ground beef or turkey to the pot. Cook, breaking it up with a spoon, until browned and cooked through (about 6-8 minutes). Drain excess fat if necessary.

    Stir in the chili powder, cumin, oregano, salt, black pepper, and red pepper flakes. Mix well to coat the meat and vegetables with the spices.

    Add the canned diced tomatoes (with their juice), kidney beans, black beans, and the broth. Stir well to combine all ingredients.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. If you prefer a thicker chili, let it simmer uncovered for the last 10 minutes.
