Preparing the Steak

    Prepare the Breading Station

    In three shallow bowls, place the flour mixed with salt, black pepper, and paprika in the first bowl. In the second bowl, beat the eggs with the milk. The third bowl will remain empty.

    Bread the Steak

    Take each piece of beef cube steak, dredge it in the flour mixture, dip it in the egg mixture, then return it to the flour mixture to coat evenly. Set aside on a plate.

    Fry the Steak

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded steaks in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Making the Sausage Gravy

    Cook the Sausage

    In a separate skillet over medium heat, crumble and cook the breakfast sausage until browned and cooked through, about 5-7 minutes.

    Make the Roux

    Sprinkle the all-purpose flour over the cooked sausage and stir well to combine. Cook for an additional 2 minutes to eliminate the raw flour taste.

    Add the Milk

    Gradually pour in the milk while continuously stirring to avoid lumps. Cook until the gravy thickens, about 5-10 minutes. Season with salt and black pepper to taste.

Serving

    Plate the Dish

    Serve the fried steak on plates and generously top with the sausage gravy. Enjoy hot!
