Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Combine Ingredients

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

  3. 3

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove and let it cool while preparing the filling.

Filling Preparation

  1. 5

    Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

  2. 6

    Add Sugar and Mix

Gradually add granulated sugar to the cream cheese, mixing until well combined.

  3. 7

    Incorporate Sour Cream and Vanilla

Add the sour cream and vanilla extract, mixing until fully incorporated.

  4. 8

    Add Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

  5. 9

    Add Lemon Juice

Finally, stir in the lemon juice until just combined.

Baking the Cheesecake

  1. 10

    Pour the Filling

Pour the cheesecake filling over the cooled crust in the springform pan.

  2. 11

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

  3. 12

    Cool and Chill

Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Then, refrigerate for at least 4 hours, preferably overnight.
