Preparation

  1. 1

    Prepare the Raspberry Puree

In a blender, combine 1 cup of fresh raspberries with 1/2 cup of water. Blend until smooth. Strain the mixture through a fine mesh sieve to remove the seeds, pressing down with a spatula to extract as much liquid as possible. Set the raspberry puree aside.

  2. 2

    Make the Lime Syrup

In a saucepan, combine 1 cup of sugar and 1 cup of water. Heat over medium heat, stirring until the sugar is fully dissolved. Remove from the heat and allow it to cool slightly.

  3. 3

    Combine Ingredients

In a large pitcher, combine the cooled lime syrup, the strained raspberry puree, and 1 cup of fresh lime juice. Stir well to combine.

  4. 4

    Dilute the Mixture

Add 4 cups of cold water to the pitcher and stir until well mixed. Adjust the sweetness if necessary, adding more sugar syrup or water to taste.

Serving

  1. 5

    Chill and Serve

Refrigerate the mixture for at least 1 hour before serving. To serve, pour the mixture over ice in glasses. Garnish with fresh mint leaves, lime wedges, and additional raspberries as desired.
