Preparing the Pie Crust

Make the Pie Dough
In a large mixing bowl, combine 2.5 cups of all-purpose flour, 1 tablespoon of granulated sugar, and 0.5 teaspoons of salt. Mix well.

Cut in Butter
Add 1 cup of unsalted butter, cut into small cubes, to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add 4 tablespoons of ice water, stirring gently until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Peel and Slice Apples
Peel, core, and slice 6 medium Granny Smith apples into thin slices.

Mix Filling Ingredients
In a large bowl, combine sliced apples with 0.75 cups of granulated sugar, 0.25 cups of brown sugar, 1 teaspoon of ground cinnamon, 0.25 teaspoons of ground nutmeg, 1 tablespoon of lemon juice, and 2 tablespoons of all-purpose flour. Toss until apples are well coated.

Add Vanilla
Stir in 1 teaspoon of vanilla extract into the apple mixture.
Assembling and Baking the Pie

Preheat the Oven
Preheat your oven to 425°F (220°C).

Fill with Apples
Pour the apple filling into the crust, spreading it evenly.

Top with Second Crust
Roll out the second disc of dough and place it over the apple filling. Trim any excess dough, then crimp the edges to seal. Cut slits in the top to allow steam to escape.

Brush and Sprinkle
Brush the top crust with 2 tablespoons of milk and sprinkle with 1 tablespoon of granulated sugar.

Bake the Pie
Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the apples are tender and the crust is golden brown.
Serving the Pie

Cool and Serve
Let the pie cool for at least 2 hours before slicing. Serve warm slices with a scoop of vanilla ice cream.
