Preheat your oven to 350°F (175°C). Spread the Rutgers University hazelnuts on a baking sheet and roast for about 10-12 minutes until they are fragrant and slightly golden. Let them cool, then chop roughly.

In a medium bowl, combine the ricotta cheese, salt, and freshly cracked black pepper. Mix well until creamy and smooth.

Slice the fresh mozzarella into thick slices. On a serving platter, alternate layers of mozzarella and dollops of the ricotta mixture. Sprinkle with the chopped hazelnuts.
