    Prepare the Filling

    In a large skillet over medium heat, sauté the guanciale until it is crispy. Remove from heat and allow it to cool slightly.

    Combine Ingredients

    In a mixing bowl, combine the sautéed guanciale, pork broth, grated Parmigiano-Reggiano cheese, shaved onion, salt, and black pepper. Mix well until combined.

    Preheat the Oven

    Preheat your oven to 190°C (375°F).

    Assemble the Pie

    Roll out one sheet of puff pastry and place it in a pie dish. Pour the filling into the pastry-lined dish. Roll out the second sheet of puff pastry and place it over the filling. Seal the edges by crimping with a fork and make a few slits in the top to allow steam to escape.

    Brush with Egg Wash

    Brush the top of the pie with the beaten egg to give it a golden finish.

    Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and crispy.
