Start by brewing 2 shots of espresso using an espresso machine or stovetop espresso maker.

Brew Espresso

In a small saucepan, heat 1 cup of milk over medium heat. Do not let it boil; you want it to steam and froth.

Heat Milk

In a large mug, pour the brewed espresso. Add 2 tablespoons of vanilla syrup and stir well to combine.

Combine Ingredients

Slowly pour the steamed milk into the mug with the espresso mixture, allowing the froth to rise to the top.

Spoon 1 cup of whipped cream on top of the milk and espresso mixture.

Sprinkle 2 tablespoons of chocolate shavings and 1 teaspoon of cinnamon powder over the whipped cream for added flavor.

In a large pot, combine the vegetable broth, water, soy sauce, minced garlic, grated ginger, bay leaves, and black peppercorns. Stir well to mix all ingredients.

Place the pot over medium-high heat and bring the mixture to a boil.

Bring to a Boil

Once boiling, reduce the heat to low and let it simmer for about 15 minutes to allow the flavors to meld.

Simmer the Broth

After 15 minutes of simmering, add the sliced carrots and mushrooms to the pot. Stir gently to incorporate.

Next, add the cubed tofu and broccoli florets to the broth. Stir to combine.

Continue to simmer for an additional 10-15 minutes, or until the vegetables are tender.

Add sesame oil, salt, and red pepper flakes to the broth. Adjust seasoning according to your preference.

Season to Taste

Remove the bay leaves and black peppercorns from the broth. Ladle the soup into bowls and garnish with chopped green onions before serving.

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, cocoa powder, salt, cinnamon, and nutmeg until well combined.

In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Combine Mixtures

Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Once the cake is completely cooled, dust the top with powdered sugar. Optionally, sprinkle with chopped nuts and fresh berries.

Juice the fresh lemons until you have about 1 cup of lemon juice. You can use a citrus juicer or simply squeeze them by hand.

Juicing Lemons

In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat on medium until the sugar dissolves completely, creating a simple syrup. Remove from heat and let it cool.

Making Sugar Syrup

In a large pitcher, combine the freshly squeezed lemon juice, the cooled sugar syrup, and the remaining 3 cups of water. Stir well to combine.

Add the fresh mint leaves to the pitcher. Use a muddler or the back of a spoon to gently press the mint leaves to release their flavor.

Add ice cubes to the pitcher or individual glasses. Pour the mint lemonade over the ice, stir gently, and serve immediately.

In a large mixing bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Stir until well mixed. Set aside.

Mix the Nut Filling

Preheat the oven to 350°F (175°C). Melt the unsalted butter in a small saucepan. Take a 9x13 inch baking dish and brush it with some melted butter.

Prepare the Filo Pastry

Place one sheet of filo pastry in the baking dish and brush it with melted butter. Repeat this process for 8 sheets, each time brushing with butter between layers.

Layer the Pastry

Spread half of the nut filling evenly over the layered filo pastry.

Add the Nut Filling

Add another 8 sheets of filo pastry, brushing each with melted butter, followed by the remaining nut filling. Top with the last 4 sheets of filo, again brushing each with butter.

Continue Layering

Using a sharp knife, cut the assembled baklava into diamond or square shapes, cutting through all the layers.

Bake in the preheated oven for about 45 minutes, or until the top is golden brown and crispy.

While the baklava is baking, combine the water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool slightly.

Once the baklava is done baking, remove it from the oven and immediately pour the honey syrup evenly over the hot baklava. Allow it to soak in and cool completely before serving.

Soak the wooden skewers in water for about 30 minutes to prevent them from burning on the grill.

Mix Ingredients

Using your hands, mix the ingredients thoroughly until well combined. Divide the mixture into equal portions and mold each portion around a skewer into a cylindrical shape.

Drizzle olive oil over the formed kofta to add flavor and prevent sticking during grilling.

Preheat your grill to medium-high heat, about 180-200°C (350-400°F).

In a large bowl, combine yogurt, olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Mix well.

Prepare the Marinade

Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Marinate the Chicken

In a small bowl, whisk together minced garlic, mayonnaise, lemon juice, and salt until smooth. Adjust salt to taste. Refrigerate until ready to serve.

Make the Garlic Sauce

Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and grill or pan-fry for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).

Cook the Chicken

Once cooked, remove the chicken from heat and let it rest for 5 minutes. Slice the chicken into strips.

Warm the pita bread on the grill or in a skillet. Place sliced chicken inside the pita, then top with sliced cucumber, diced tomato, red onion, and chopped parsley.

Rinse the dried chickpeas and place them in a bowl. Cover with water and soak overnight, or for at least 8 hours, until they are soft.

In a food processor, combine the soaked chickpeas (drained), chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but combined.

Blend Ingredients

Transfer the mixture to a bowl and stir in the all-purpose flour until well incorporated. If the mixture is too wet, add a little more flour until it holds together.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to firm up.

Chill Mixture

Once chilled, use your hands to form the mixture into golf ball-sized balls.

In a deep frying pan, heat the vegetable oil over medium heat until hot (around 350°F or 175°C).

Carefully drop the falafel balls into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 5-7 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a bowl, combine tahini, minced garlic, lemon juice, water, and salt. Whisk until smooth and creamy.

If the sauce is too thick, add more water, one tablespoon at a time, until desired consistency is reached.
