Method

Preparation of Filling

    Mix the Nut Filling

    In a large mixing bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Stir until well mixed. Set aside.

Assembly

    Prepare the Filo Pastry

    Preheat the oven to 350°F (175°C). Melt the unsalted butter in a small saucepan. Take a 9x13 inch baking dish and brush it with some melted butter.

    Layer the Pastry

    Place one sheet of filo pastry in the baking dish and brush it with melted butter. Repeat this process for 8 sheets, each time brushing with butter between layers.

    Add the Nut Filling

    Spread half of the nut filling evenly over the layered filo pastry.

    Continue Layering

    Add another 8 sheets of filo pastry, brushing each with melted butter, followed by the remaining nut filling. Top with the last 4 sheets of filo, again brushing each with butter.

    Cut the Baklava

    Using a sharp knife, cut the assembled baklava into diamond or square shapes, cutting through all the layers.

Baking

    Bake the Baklava

    Bake in the preheated oven for about 45 minutes, or until the top is golden brown and crispy.

Honey Syrup

    Prepare the Honey Syrup

    While the baklava is baking, combine the water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool slightly.

    Pour Syrup over Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the honey syrup evenly over the hot baklava. Allow it to soak in and cool completely before serving.
