    Prepare the Cheese Sauce

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk and BUTTFACE AMBER ALE, whisking until smooth. Stir in shredded cheddar cheese until melted. Season with salt and black pepper to taste. Remove from heat and set aside.

    Make the Chipotle Lime Mayo

    In a small bowl, combine mayonnaise, minced chipotle peppers, lime juice, garlic powder, and salt. Mix well and set aside.

    Prepare the Pattys

    Form ground beef into two burger patties and season with southwest seasoning. Grill or pan-fry over medium-high heat for about 4-5 minutes on each side or until desired doneness.

    Assemble the Burgers

    Place a slice of pepper jack cheese on each patty during the last minute of cooking to melt. Toast hamburger buns if desired. Spread chipotle lime mayo on the bottom half of the bun, add the burger patty, top with smoked Anaheim peppers, fried jalapeño straws, and finally the cheese sauce. Cover with the top half of the bun and serve.
