Make the Carnitas
In a slow cooker, combine the pork shoulder, orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker to soak in the juices.

Prepare the Slaw
In a bowl, combine shredded cabbage, chopped tarragon, and chipotle adobo sauce. Toss to coat and set aside.

Make the Pickled Red Onion
In a small bowl, combine thinly sliced red onion with vinegar and a pinch of salt. Let it sit for at least 30 minutes.

Prepare the Avocado Crema
In a blender, combine ripe avocados, sour cream, lime juice, and a pinch of salt. Blend until smooth.
