    Prepare the Filling

    In a medium bowl, combine the pulled pork carnitas, diced smoked Anaheim pepper, salt, and black pepper. Mix well until the ingredients are evenly distributed.

    Assemble the Sandwich

    On two slices of white bread, evenly distribute the pork carnitas mixture. Top with Wisconsin pepper jack and mozzarella cheese. Place the remaining slices of bread on top to form two sandwiches.

    Grill the Sandwiches

    In a skillet over medium heat, melt 1 tablespoon of butter. Once melted, place the sandwiches in the skillet. Grill until golden brown, about 3-4 minutes per side, adding the remaining butter as needed.

    Once the cheese has melted and the bread is golden brown, remove the sandwiches from the skillet. Cut in half and serve warm.
