    Prepare the Clams

    In a large pot, bring water to a boil. Add the fresh clams and cook until they open, about 5-7 minutes. Remove from heat, drain, and set aside. Once cooled, remove the clams from their shells and chop them coarsely.

    Cook the Bacon

    In the same pot, cook bacon over medium heat until crispy. Remove bacon, crumble it, and set aside, leaving bacon grease in the pot.

    Sauté Vegetables

    Add butter to the pot with the bacon grease. Sauté onion, celery, and garlic until soft, about 5 minutes.

    Add Potatoes and Liquids

    Stir in the diced potatoes, clam juice, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.

    Finish the Chowder

    Stir in the heavy cream and chopped clams. Simmer for an additional 5 minutes to heat through. Adjust seasoning if necessary.

    Serve

    Ladle chowder into bowls, garnish with crumbled bacon and chopped parsley. Enjoy!
