Prepare the Batter
In a mixing bowl, whisk together Hefeweizen beer, all-purpose flour, cornstarch, baking powder, salt, and white pepper until smooth. Let the batter rest for about 15 minutes.

Prepare the Fish
While the batter is resting, pat the fish fillets dry with paper towels and season with salt and pepper.

Heat the Oil
In a large frying pan or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry in batches until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.
