Prepare the Dijon Mayo
In a small bowl, mix together the Dijon mustard and mayonnaise until well combined. Set aside.

Assemble the Sandwich
Lay out 2 slices of sourdough bread. Spread the Dijon mayo on each slice. On one slice, layer the pork carnitas, Canadian bacon, pepper jack cheese, Havarti cheese, and dill pickle chips. Top with the other slice of bread.

Grill the Sandwich
In a skillet over medium heat, melt 1 tablespoon of butter. Place the assembled sandwich in the skillet and grill for about 3-4 minutes, or until the bread is golden brown. Carefully flip the sandwich, adding the remaining butter to the skillet, and grill the other side for another 3-4 minutes until the cheese is melted and the bread is toasted.

Remove the sandwich from the skillet, slice in half, and serve warm.
