    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water while stirring with chopsticks or a fork until the mixture forms a shaggy dough.

    Transfer the dough to a lightly floured surface and knead it for about 5-7 minutes, until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a large bowl, combine ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

Gyoza Assembly

    Roll Out the Dough

    After resting, divide the dough into small pieces (about 1 inch each). Roll each piece into a thin circle (about 3 inches in diameter) on a floured surface.

    Place about 1 tablespoon of filling in the center of each dough circle. Moisten the edges with water, fold the dough over to create a half-moon shape, and pinch the edges to seal.

Cooking

    Heat a large skillet over medium heat and add a tablespoon of vegetable oil. Arrange the gyoza in the skillet, flat side down, and cook until the bottoms are golden brown (about 2-3 minutes).
