Preparation of Filling

    Cook the Filling

    In a medium skillet, heat a tablespoon of vegetable oil over medium heat. Add the finely chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

    Add the shredded chicken, chopped parsley, salt, and black pepper to the skillet. Stir well and cook for an additional 3-5 minutes. Remove from heat and let it cool slightly.

    Once the mixture has cooled, stir in the shredded cheddar cheese until well combined.

Preparation of Croquettes

    In a large bowl, mix the mashed potatoes with flour until fully combined. The mixture should be thick and moldable.

    Take a small amount of the potato mixture and flatten it in your palm. Place a tablespoon of the chicken filling in the center and fold the potato mixture over it, shaping it into a croquette. Repeat until all mixture is used.
