In a large bowl, combine the soy sauce, mirin, sake, brown sugar, minced garlic, minced ginger, and five spice powder. Mix well. Add the pork belly to the marinade, ensuring it is fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat your oven to 160°C (320°F). Remove the pork from the marinade and place it on a roasting rack in a baking dish. Reserve the marinade. Roast the pork for about 2 hours, brushing it with the marinade every 30 minutes, until the meat is tender and the skin is crispy. Let it rest for 15 minutes before slicing.
