Prepare the Vegetables

Wash and slice the carrot, cucumber, bell pepper, red cabbage, and avocado into thin strips.

Soften the Rice Paper

Fill a large shallow dish with warm water. Dip one rice paper wrap into the water for about 5 seconds, or until it becomes soft and pliable. Remove and lay it flat on a clean surface.

Assemble the Spring Rolls

Place a small handful of each vegetable, along with a few mint and cilantro leaves, in the center of the rice paper. Be careful not to overfill.

Roll the Spring Rolls

Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling completely. Repeat for remaining wraps.

Make the Dipping Sauce

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and salt. Adjust seasoning to taste.
