Prepare the Chicken
Cut the chicken breast into bite-sized pieces. In a bowl, beat the egg and mix with the soy sauce. Add the chicken pieces and marinate for 15 minutes.
Bread the Chicken
Remove the chicken from the marinade and coat each piece in cornstarch, shaking off the excess.
Fry the Chicken
In a large skillet or wok, heat the vegetable oil over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 4-5 minutes per batch. Remove and drain on paper towels.
Make the Sauce
In the same skillet, remove excess oil leaving about 1 tablespoon. Add the onion, garlic, and ginger, and sauté until fragrant. Stir in the rice vinegar, brown sugar, and a splash of water. Cook until the sauce thickens, about 2-3 minutes.
Combine Chicken and Sauce
Return the fried chicken to the skillet and toss to coat in the sauce. Drizzle with sesame oil and mix well.
Serve
Serve the General Tso’s Chicken over steamed white rice, garnished with chopped green onions.
