    In a pot, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes or until rice is tender. Fluff with a fork and set aside.

    Season chicken breasts with salt and pepper. Dredge each breast in flour, dip in beaten eggs, and coat with panko breadcrumbs. Heat vegetable oil in a large skillet over medium heat. Fry chicken for 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels and slice.

    In a saucepan, sauté chopped onion, carrots, and potato until tender. Add garlic and ginger, cooking for an additional minute. Stir in curry powder and cook for another 1-2 minutes.
