Mofongo Preparation
Fry the Plantains
Peel the green plantains and cut them into thick slices. In a large skillet, heat the olive oil over medium heat. Fry the plantain slices until they are golden brown on all sides, about 4-5 minutes. Remove from oil and drain on paper towels.
Mash the Ingredients
In a large mortar and pestle, or a bowl with a sturdy fork, mash the fried plantains with the garlic cloves and pork cracklings. Slowly add the chicken broth until the mixture reaches a creamy consistency. Season with salt and black pepper to taste.
Shape and Serve
Form the mashed plantain mixture into a ball or mound shape. Serve hot as a side dish or base for your favorite protein, drizzling with additional olive oil if desired.
