Prepare the Plantains

Peel the green plantains and cut them into 1-inch pieces.

Boil Plantains

In a large pot, bring the chicken broth to a boil. Add the plantain pieces and cook for about 15-20 minutes or until they are tender.

Mash the Plantains

Drain the plantains, reserving the broth. In a mixing bowl, mash the plantains with a fork or a potato masher, adding in the garlic, olive oil, salt, and black pepper until smooth.

Combine with Chicharrón

Fold in the pork cracklings (chicharrón) and fresh cilantro into the mashed plantains until evenly mixed.

Shape and Serve

Shape the mixture into a mound or a serving bowl. Optionally, drizzle some reserved chicken broth on top before serving.
