Marinate the Pork
In a large bowl, combine lime juice, soy sauce, brown sugar, cumin, paprika, black pepper, and minced garlic. Add the pork shoulder and ensure it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.
Cook the Pork
Remove the pork from the marinade and let it sit at room temperature for about 30 minutes. Grill the pork shoulder for about 20-25 minutes on each side, or until the internal temperature reaches 190°F (88°C) for tender, pull-apart meat.
Rest and Chop
Once cooked, remove the pork from the grill and let it rest for 10 minutes. Then chop into bite-sized pieces.
Serve
Garnish with fresh cilantro and serve with your choice of sides, such as rice or tortillas.
