Prepare the Beans

If using dried kidney beans, soak them overnight and then cook until tender. If using canned beans, rinse and drain them.

Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes. Add the minced garlic and sauté for another minute.

Add Tomatoes and Spices

Stir in the diced tomatoes, cumin, oregano, salt, and black pepper. Cook for about 3-4 minutes until the tomatoes start to break down.

Combine Beans and Broth

Add the cooked or canned kidney beans and water or vegetable broth to the pot. Stir well and bring to a boil.

Simmer

Reduce the heat to low, cover, and let it simmer for 20-25 minutes. Stir occasionally.

Finish and Serve

Once done, stir in the fresh cilantro. Adjust seasoning to taste and serve warm.
