Herb Crusted Mahi

Prepare the Herb Mixture

In a bowl, combine chopped parsley, dill, chives, minced garlic, olive oil, salt, and black pepper. Mix well to form a paste.

Coat the Mahi Mahi

Preheat the oven to 400°F (200°C). Place the Mahi Mahi fillets on a baking sheet lined with parchment paper. Spread the herb mixture evenly over the top of each fillet.

Bake the Fish

Bake in the preheated oven for about 15-20 minutes or until the fish flakes easily with a fork.

Lemon Aioli

Make the Aioli

In a small bowl, combine mayonnaise, lemon juice, lemon zest, minced garlic, and salt. Whisk until smooth and creamy. Adjust seasoning to taste.

Mixed Greens Salad

Prepare the Salad

In a large bowl, combine mixed greens, trimmed green beans, thinly sliced red onion, and fresh fruit.

Dress the Salad

Drizzle champagne vinaigrette over the salad and toss gently to combine.

Sauté Vegetables

In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onions are translucent.

Combine Ingredients

Add canned red beans (drained), cooked rice, and Cajun seasoning to the skillet. Stir well to combine and heat through, about 5-7 minutes.
