    In a saucepan, combine milk, heavy cream, and the seeds from the vanilla bean (along with the bean pod). Heat over medium heat until steaming but not boiling. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth. Slowly pour the warm milk mixture into the egg mixture while whisking constantly. Return to the saucepan and cook over low heat, stirring until thickened. Strain into a bowl and cool.

    Prepare Granola Brittle

    Preheat the oven to 350°F (175°C). In a saucepan, combine honey, brown sugar, and butter over medium heat until melted. Stir in oats, nuts, and salt until well combined. Spread mixture onto a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden. Let cool and break into pieces.

Goat's Cheese Ice Cream Preparation

    Make Goat's Cheese Ice Cream

    In a blender, combine goat cheese, milk, heavy cream, sugar, vanilla extract, and salt. Blend until smooth. Pour mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.
