Beef Striploin

Prepare the beef

Season the beef striploin steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steaks for 4-5 minutes per side for medium rare. Remove from skillet and let rest.

Potato Rosti

Make the potato rosti

In a large bowl, mix grated potatoes with salt and pepper. Melt butter in a skillet over medium heat. Form potato mixture into patties and cook until golden brown on both sides, about 5 minutes per side.

Bacon Jam

Prepare the bacon jam

In a saucepan, cook chopped bacon over medium heat until crispy. Add diced onion and cook until translucent. Stir in brown sugar, apple cider vinegar, and black pepper. Simmer for 10-15 minutes until thickened.

Sour Shallots

Pickle the shallots

In a bowl, combine thinly sliced shallots with white vinegar and salt. Let sit for at least 30 minutes to pickle.

Red Wine Au Jus

Make the au jus

In the same skillet used for the beef, pour in red wine and scrape up the browned bits. Add beef stock, and simmer for 10 minutes until reduced. Stir in butter, and season with salt and pepper to taste.
