Prepare the Puff Pastry

Preheat your oven to 200°C (400°F). Roll out the puff pastry sheet and cut it into strips or rectangles according to your desired eclair shape. Place them on a baking sheet lined with parchment paper.

Bake the Pastry

Bake the puff pastry in the preheated oven for about 15-20 minutes or until golden and puffed. Remove from the oven and let cool.

Make the Filling

In a mixing bowl, combine the dressed red crab, cream cheese, chopped fresh dill, salt, and black pepper. Mix until well combined.

Prepare the Avocado and Cucumber

Slice the smoked avocado and cucumber thinly. Set aside.

Assemble the Eclairs

Once the pastry has cooled, carefully slice them open. Pipe or spoon the crab filling into each eclair. Top with slices of smoked avocado and cucumber.

Garnish with Meyer Lemon

Zest the Meyer lemon over the assembled eclairs and squeeze a few drops of juice for added flavor.
