    Prepare the Shallot Cream

    In a small saucepan, combine the chopped shallots and heavy cream. Cook over medium heat until the shallots are soft and the cream has thickened slightly. Season with salt and black pepper to taste. Set aside.

    Cook the Salmon

    Preheat your grill or smoker. Brush the salmon fillets with olive oil and season with salt and pepper. Place the salmon on the grill or in the smoker and cook for about 10-12 minutes, or until the salmon is cooked through and has a nice smoky flavor.

    Prepare the Fried Bread

    In a frying pan, heat a little olive oil over medium heat. Fry the bread slices until they are golden brown and crisp on both sides. Drain on paper towels.

    On each plate, place a slice of fried bread. Top with a portion of the hot-smoked salmon, then add the sea and soil lettuce, and a few slices of turnip. Drizzle with the shallot cream before serving.
