Prepare the Spätzle
In a large mixing bowl, combine the flour, eggs, milk, salt, and black pepper. Mix until you have a smooth, thick batter. Let it rest for about 10 minutes.
Cook the Chorizo and Onions
In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced chorizo and cook until browned. Add the sliced onions and cook until they are soft and caramelized. Set aside.
Boil the Spätzle
Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, press the batter into the boiling water. Cook until the Spätzle rise to the surface, about 2-3 minutes. Remove and drain.
Combine and Melt the Cheese
In the same skillet with the chorizo and onions, add the chicken broth and bring to a simmer. Stir in the cooked Spätzle and the four-cheese blend. Mix well until the cheese is melted and everything is combined. Adjust seasoning with salt and pepper.
Serve
Serve hot, garnished with fresh parsley and an additional sprinkle of cheese if desired.
